How to Make Buttermilk Waffles

Growing up my aunt would make homemade waffles and share them with my family. We would freeze them and then toast them like toaster waffles, only these were much better. I have tried many different mixes and recipes, but none compared to the ones my aunt made. Finally, I created my own recipe that is good enough to share. It combines the sweet taste of buttermilk with a hint of vanilla to make a special breakfast treat.

This recipe makes about 26 waffles making plenty to freeze and reheat in your toaster. The waffles are easily frozen for up to 6 months using freezer storage bags. If you don’t want to make that many the recipe can be halved to make just a dozen. I hope you enjoy this recipe as much as we do.

What You Will Need

  • Waffle Iron
  • Cooling Rack
  • Freezer Bags
  • Large Mixing Bowl
  • Small Mixing Bowl
  • Large Spoon
  • Fork or Whisk

Ingredients

  • 4 1/2 Cups flour
  • 6 Teaspoons baking powder
  • 1 Teaspoon baking soda
  • 1 Teaspoon salt
  • 3 Tablespoons sugar
  • 4 Beaten eggs
  • 1 Quart Buttermilk (4 cups)
  • 1/2 Cup skim milk
  • 1 1/2 Cup canola oil
  • 2 Teaspoons vanilla

Making Buttermilk Waffles for Freezing

Step 1: Heat up your waffle iron.

Step 2: Sift together dry ingredients in large mixing bowl.

Step 3: In small mixing bowl, combine eggs, skim milk, and vanilla and beat using a fork or whisk.

Step 4: Add oil, buttermilk, and egg mixture to dry ingredients just before baking.

Step 5: Beat mixture with large spoon just until moistened.

NOTE: Be sure to scrape the sides and bottom of your mixing bowl to incorporate all dry ingredients into the mixture.

Step 6: Bake waffles in preheated baker until steam reduces or by following the manufacture’s recommendations. This waffle iron make 4 waffles and takes about 1 cup of batter to fill.

NOTE: Because of variances in small appliances the waffles may take 4 to 8 minutes to cook. Watch your waffles closely to make sure not to overcook them.

Step 7: Remove the waffles from the baker and place on a cooling rack.

NOTE: Do not stack waffles or they will  become soggy.

Step 8: Once the waffles are completely cool, place a serving size (about 3) in a quart size freezer bag. Push out excess air and seal.

Step 9: The waffles can be enjoyed right away or frozen for up to 6 months. Serve with your favorite fruit compote, whipped topping, or maple syrup.

Taking the time to make a wholesome delicious breakfast is not always possible. Making and freezing homemade waffles in advance will alleviate some of the morning rush. Enjoy!
