How to Make Pie Crust Cookies

Sometimes it is not reasonable to make a whole pie, so a quick and simple solution to this is to create mini pie crust “cookies”. They store easily and can be shared with neighbors, friends, or prepared for desserts for a party where the food is self-serve. This also comes in handy if you don’t have a pie plate! You can use this as a variation for strawberry or blueberry pie or any other type of pie you don’t need to bake. Most of the items you need for this project can be purchased at Meijer, Kroger, or another local grocery store.

What You Will Need

1 completed recipe of homemade pie crust dough with extra flour
Rolling pin
Cookie Sheet
Biscuit Cutter, Circle Cookie Cutter, or round drinking glass

How to make Pie Crust Cookies

aka Pie without a Pie Plate

Step 1: Follow the homemade pie crust recipe, but rather than placing the rolled out dough in the pie plate, simply cut out round “cookies” using a biscuit cutter, cookie cutter, or an inverted glass.

NOTE: When cutting out the circles, cut close together to decrease the number of times you will need to roll out the dough.

Step 2: Remove the excess dough between the circles.

NOTE: After collecting the excess dough you can ball it up and roll it out again for additional “cookies.”

Step 3: Carefully lift the circles off the counter and place them on a cookie sheet spacing at least 1/2 inch apart.

Step 4: Bake the “cookies” for 8-12 minutes at 400 degrees. Watch the “cookies” to ensure you do not burn them.

NOTE: Because the dough was not pricked, it will puff up slightly providing a light and crispy “cookie” to complement the pie filling. Prior to baking, prick the dough with a fork if you want them to remain flat.

Step 5: Remove the pie crust cookies from the tray and allow to cool. Store in an air tight container until you are ready to build your desserts.

Step 6: Spoon 3 tablespoons of pie filling over pie crust cookies and garnish with whipped topping or vanilla ice cream.

    I find that making the pie crust cookies allows me to serve individuals better than making a whole pie–especially when I use strawberry filling. This option is great for bake sales, picnics, or church gatherings. You can also use canned pie filling such as blueberry or even cook apples on the stove top in a sauce pan with sugar and cinnamon. The apples can be served warm with vanilla ice cream for a delicious dessert.
